Day 5: Whole30

Making it through the first work week doing Whole30 feels like a pretty big accomplishment. To celebrate, I made a new recipe for dinner.  I feel like I learned a bit this week. It’s a balance between prepping more in advance AND not wanting to eat the same meal everyday. I like food and like eating different foods all the time so even in scheduling out this week, trying to figure out some easy throw together meals during the week to compliment some preparation. How are you guys dealing with that?

Here was today’s meal plan:

Breakfast: Last day of the Breakfast Hash. Even five days later, it still tastes good. It didn’t hurt that I added avocado this morning.

Lunch: I decided to give yesterday’s lunch another try. The Slow Cooker Spicy Stuffed Cabbage Casserole tasted a bit better today with a little more pepper, avocado and roasted plantains.

Snack: Apple with almond butter

Dinner: I had some leftover ground beef  and crushed tomatoes from making the cabbage casserole. Combined it with spaghetti squash for an easy Friday night meal and have leftovers for tomorrow!
